How to make a perfect cappuccino

Cappuccino is, with the characteristics it has today, a drink born in Italy, prepared with espresso coffee and milk whipped with steam to give it creaminess. It takes its name from another drink based on coffee and milk previously prepared in Austria, called " kapuziner ", with a similar color. A cappuccino is made up of 125 ml of milk and 25 ml of espresso coffee, sometimes cocoa powder or cinnamon is added according to the consumer's taste.

The characteristic of cappuccino is given by the espresso coffee, the texture and temperature of the milk, since it should not exceed 65 °C. The barista's technique to give volume to milk is by introducing, using pressurized steam, tiny air bubbles that give it a creamy texture.

Pour 125ml of fresh whole milk into a metal milk jug , the level reaching just below the spout. You have to use fresh whole milk because it makes the best cream.

If necessary, place a thermometer in the milk jug. The milk for a cappuccino should be between 55 and 65ºC when the steaming process ends.

Place the steam nozzle inside the milk jug until it is just below the surface of the milk and then release the steam.

Listen while you make the cream. You should hear a constant ch-ch-ch sound if you have the wand in the correct position. If you hear a whine, the steam wand is too deep in the milk jug, raise the tip of the steam wand a little, but if you see large bubbles, the tip of the steam wand is too high, raise the wand slightly. jug.

The foam is created up to 38ºC, then you just heat the milk. Turn off the steam nozzle when the cream reaches the desired temperature, which will be between 55 and 65ºC with a maximum of 70ºC. Stop a few degrees before the desired temperature, as it will continue to rise.

Place the milk jug aside, while making the espresso, you can remove the bubbles by lightly tapping the milk jug against the table and to keep the crema, keep rotating the jug slightly.
